Modified StarchThe modified starch is the most commonly used substitute for gum arabic in beverage emulsions. Starches, sourced from potato, corn, rice, tapioca, and wheat, are modified for use in the food industry because natural starches consist of hydrophilic glucose backbones, which cause them to display poor surface activity.
